Ranch Chicken

This whole page is devoted to our family favorite recipes right? Well this is my favorite. Like ever. Each chicken gets me overtime! Its some serious comfort food, and it ALWAYS TASTES GOOD! I love it! I love the sauce… it’s amazing! I don’t even have to have the chicken in this recipe… it’s my least favorite part! When a meat farmer thinks the meat is the least best part, you KNOW IT’S GOOD! Most of the time I cut up the chicken so it soaks up more of the sauce, and I will sometimes double the amount of sauce and add more veggies because I just want to eat more of that savory sauce. You aren’t allowed to judge me till you try it, ok? I mean its veggies so…

Serves 4

You’ll need:

2-4 chicken breasts

1 pack of ranch dressing mix

1 can cream of chicken

1/2 cup of milk

Carrots, broccoli, and cauliflower

Egg noodles

Butter



To start, Chop up all your veggies into bite size pieces. I prefer to cut them a little on the small side just so they don’t take as long to cook. Sauté them in a some butter till they have softened.

Next, cook your chicken till it’s brown on both sides. I like to season my chicken with a little garlic powder or a tiny bit of garlic salt, but other than that, cook your chicken plain. There are a lot of seasonings in that ranch packet, so you don’t want it to be over powering or super salty. At this time, you can choose to cut up your chicken or leave it as whole breasts!

Mix together the ranch pack, milk, and cream of chicken and pour it over the chicken. Make sure you coat the chicken really well. Bring it to a boil and then simmer for about 5 minutes till the sauce thickens…add veggies and cook just enough to heat them through again.

Serve over cooked egg noodles, and THAT’S IT FOLKS! So delicious! It makes excellent leftovers, too. I make this same amount for just me and my husband because I love having this to take to work the next day! Super easy- super good! it also only takes one pan, plus one pot to cook the noodles in. I’m all about fewer dishes… have I mentioned I don't have a dishwasher?
